Barbuto Brooklyn Debuts with Signature Dishes and New Twists

Chef Jonathan Waxman brings his iconic West Village restaurant to Brooklyn Heights

Chef Jonathan Waxman has expanded his renowned West Village establishment, Barbuto, to Brooklyn Heights, opening the doors of Barbuto Brooklyn on September 17, 2025.

 

Located within the 1 Hotel Brooklyn Bridge at 60 Furman Street, the new venue offers a spacious 210-seat dining area adorned with industrial elements and lush greenery, providing a fresh ambiance for both loyal patrons and newcomers.

 

The menu continues to showcase Waxman's celebrated California-Italian cuisine, featuring beloved classics such as the JW Pollo al Forno—roasted chicken with salsa verde—the signature kale salad, and gnocchi with hazelnut pesto.

 

Adding to the culinary repertoire, new offerings include the Pizza Brooklyn, topped with Acme smoked salmon, avocado, crème fraîche, and caviar, and the Pasta Bambini, a fettuccine dish with butter and Parmesan.

 

In addition to the main dining area, the establishment features the Barbuto Garden, an outdoor space offering its own selection of bites and a rotating list of 16 beers on tap, perfect for al fresco dining.

 

Waxman first introduced Barbuto in 2004 in the West Village, where it quickly became a neighborhood staple. The expansion to Brooklyn marks a significant milestone, bringing the restaurant's signature dishes and new innovations to a broader audience.

In other culinary news, the team behind the acclaimed cocktail bar The Dead Rabbit has ventured across the Hudson River to open San Patricios in Jersey City. This new establishment, located at 8 Erie Street, blends Irish pub traditions with the vibrancy of a Mexican cantina.

 

Opening on September 19, 2025, San Patricios pays homage to the historical connection between Ireland and Mexico, particularly the San Patricio Battalion during the Mexican-American War. The interior design reflects this fusion, combining worn wood and leather banquettes with Talavera tiles and hand-painted murals.

 

The beverage program showcases a diverse selection, featuring Irish whiskey, poitín, tequila, mezcal, and rare agave spirits like raicilla and bacanora. Signature cocktails include the San Patricio Coffee, a blend of tequila, Irish whiskey, café de olla, and whipped cream, and the Margarita de la Casa with poitín, sour orange, agave, and tequila.

 

The culinary offerings merge pub comfort with Mexican street flavors, presenting dishes such as corned beef tacos with apple cabbage slaw, chicken curry tacos with mango salsa, and a ham and cheese torta layered with Irish cheddar, queso fresco, and pickled jalapeños.
